  • ½ cup granulated erythritol
  • ½ egg (beat egg and use half)
  • ½ tsp vanilla extract
  • ¾ cup almond flour
  • ¼ cup ground almonds
  • ½ tsp baking powder
  • 3 tbsp unsweetened cocoa

  • In a mixing bowl, cream together the butter and erythritol.
  • Fold in the dry ingredients along with the egg.
  • Stir until smooth.

  • Finally, fold in the chopped chocolate.
  • Place the mixture on a piece of plastic wrap and shape into a log.
  • Refrigerate for 1-2 hours.
  • Preheat oven to 350F and line a cookie sheet with baking paper.

  • Unwrap the log and cut the dough into 12 wafer pieces.
  • Arrange the wafers onto the cookie sheet and bake for 10-11 minutes.

I knew rhey were too dry when I rolled the log, but thought nah…she actually posted it so it’ll turn out, I’ll “trust the process “. Well, they were way too dry, crumbled in your fingers when you try to get them off the tray…very sad indeed…😔
