Keto Broccoli Cheese Soup

  • 4 cups broccoli florets
  • 3 ½ cups vegetable stock or chicken stock
  • 3 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 1 clove garlic, minced
  • Olive oil, a drizzle


  • Heat a bit of olive oil in a saucepot over medium-high heat.
  • Add garlic and sauté until fragrant.
  • Toss in the broccoli and stir until coated with oil.
  • Pour in the vegetable stock and heavy cream.
  • Bring to a boil. Reduce heat and simmer for 15 minutes or until the broccoli is tender.
  • Add the shredded cheese gradually ½ cup at the time and stir until the cheese has melted before adding more.
  • Serve warm.
