This is a quick and easy vegetable soup that’s easy to love. It’s made with a couple of simple veggies and instant bone broth along with some half-and half. Serve it as an appetizer or have two servings as a simple and light weeknight dinner.
Winning Creamy Vegetable Soup

Ingredients
- 2 tsp olive oil or butter
- 1 tsp onion powder
- 2 cups water
- ¼ tsp xanthan gum
- 2 packets Keto Bone Broth (Beef Chili)
- 1 ½ cup half-and-half cream
- ½ cup chopped celery root
- 2 small carrots, peeled, sliced
- 2 cups broccoli florets
- Salt and pepper, to taste
Instructions
- Heat oil or butter in a saucepot over medium-high heat.
- Add celery and carrots. Cook stirring for 6-7 minutes.
- Stir in water, xanthan gum, beef chili broth, half-and-half cream, and simmer for 15 minutes.
- Add broccoli florets and cook for 7 more minutes or until the broccoli is tender.
- Serve warm.
Tips & Tricks
If you wish to lower the carb count even further, feel free to omit the carrots and replace them with 2 cups cauliflower florets.
You can also substitute instant broth for regular chicken broth.
Serve this topped with a bit of parsley and even grated cheddar for extra flavor.
