With its fiber-rich crust and cream cheese and strawberry filling, this pie will make you feel good about dessert. The crust is made from Nui biscuits, which are low-carb biscuits sweetened with erythritol, while the filling is enriched with birthday-cake-flavored protein powder. And by arranging the strawberries in a star-shape pattern, this no-bake summertime dessert becomes the perfect choice for Independence Day celebrations.

Tips & Tricks
The protein powder added to the filling contains stevia, which helps add natural sweetness to this pie. Feel free to check the filling for sweetness before spreading into the crust and add some granulated erythritol if needed. The erythritol granules will also help break down the cream cheese during mixing. If you’d like to make it more festive, top the pie with a handful of blueberries to add some blue to the decoration.
